Vegan Bolognese

Ingredients (4 servings)

Other

  • 1 tbsp Coconut oil
  • 1 medium Red onion (diced)
  • 1 stalk, medium Celery, raw (diced)
  • 4 cup Mushrooms, raw (diced)
  • 3 medium Carrots, raw (grated)
  • 4 clove Garlic, raw (minced or crushed)
  • 2 1/2 cup Water (or use vegetable broth)
  • 3 cup Diced tomatoes, canned (or marinara sauce)
  • 1 cup Lentils, raw
  • 1 tbsp Soy sauce (or tamari)
  • 1 tbsp Balsamic vinegar
  • 1/2 cup Soy milk (or any plant based milk)
  • 1 tsp Cornstarch
  • 225 g Pasta, dry (pasta of choice)

Spices

  • 1 tsp, ground Oregano, dried
  • 1 tsp, ground Basil, dried
  • 1 tsp Onion powder
  • 1/4 tsp Chili powder (or to taste)
  • 1 tsp Salt (or to taste)
  • 1 dash Black pepper (or to taste)

To Serve

  • 1/2 tbsp Nutritional yeast

Instructions

  1. Soak lentils
    Soak the lentils in lukewarm water around 15 minutes. This will allow the lentils will cook faster and ease digestion. Skip the step if using red lentils.
  2. Sauté the vegetables
    Sauté the onion, celery mushrooms and carrots in a little oil in a pot over medium heat, until soften, around 5 minutes. Stir in spices and garlic and sauté for another minute, stirring frequently.
  3. Add water (or vegetable broth), diced tomatoes and drained lentils. Stir to combine.
  4. Bring the mixture to a boil and let it simmer for around 30 minutes or until lentils are tender. This may take longer depending on the variety of lentils.
  5. Cook pasta
    Meanwhile cook the pasta of your choice according to the package instructions.
  6. Once lentils are tender, add the soy sauce and balsamic vinegar to the pot. In a small bowl, mix together the plant based milk and cornstarch and add the mixture to the pot to thicken the sauce.
  7. Adjust seasonings adding more salt, pepper or spices to taste. If needed add more water (or vegetable broth).
  8. Serve over pasta and sprinkle with nutritional yeast. Enjoy!
  9. How to store
    Store the bolognese sauce in an airtight container, in the refrigerator for up to 4 days.
