Tofu Pancakes

Is there anything better than starting your morning with a giant stack of super tasty pancakes?

Ingredients (2 servings)


  • 1 1/2 cup White wheat flour, all-purpose
  • 1/2 tbsp Baking powder


  • 1 block Tofu
  • 1 1/4 cup Water
  • 4 tbsp Honey
  • 1 tbsp Coconut oil
  • 1 tbsp Apple cider vinegar

To Serve

  • 2 tbsp Sugar free jam, any flavor
  • 1/2 cup Yogurt, soy

  1. In a medium bowl, add all dry ingredients and stir to combine.
  2. Add the liquid ingredients to the food processor and process until smooth.
  3. Pour the liquid mixture into the dry mixture and gently whisk to combine.
  4. Let the batter rest for 5 - 10 minutes.
  5. To cook the pancakes, pour about 1/2 cup of batter onto a nonstick pan over medium heat.
  6. When the top begins to bubble, flip the pancake and cook until golden, around two minutes on each side.
  7. Serve with plant based yogurt and jam. Enjoy!
