Ingredients (2 servings)
Dry
- 1 1/2 cup White wheat flour, all-purpose
- 1/2 tbsp Baking powder
Liquid
- 1 block Tofu
- 1 1/4 cup Water
- 4 tbsp Honey
- 1 tbsp Coconut oil
- 1 tbsp Apple cider vinegar
To Serve
- 2 tbsp Sugar free jam, any flavor
- 1/2 cup Yogurt, soy

Instructions
- In a medium bowl, add all dry ingredients and stir to combine.
- Add the liquid ingredients to the food processor and process until smooth.
- Pour the liquid mixture into the dry mixture and gently whisk to combine.
- Let the batter rest for 5 - 10 minutes.
- To cook the pancakes, pour about 1/2 cup of batter onto a nonstick pan over medium heat.
- When the top begins to bubble, flip the pancake and cook until golden, around two minutes on each side.
- Serve with plant based yogurt and jam. Enjoy!
