Super Green Spaghetti

Super green, super speedy spaghetti. So simple but, boy, sooo good!

Ingredients (2 servings)

Spaghetti

  • 200 g Pasta, whole-wheat, dry (spaghetti, gluten-free if needed)

Super Green Sauce

  • 1 1/3 cup Green peas, frozen
  • 2 cup Spinach, raw (baby leaves)
  • 1/4 cup Peppermint, fresh
  • 1 clove Garlic, raw
  • 1/3 cup shelled Walnuts
  • 1 fruit Lemon juice, raw
  • 1/4 cup Oat milk (any plant-based milk)
  • 1/2 tsp Salt
  • 1/4 tsp, ground Black pepper

Instructions

  1. Defrost the peas
    Cover the peas in boiling water and set them aside for a few minutes.
  2. Boil your spaghetti
    Cook spaghetti according to package instructions.
  3. Make the Super Green Sauce
    In the meantime, let’s prepare the sauce. Add the drained peas, baby spinach, mint, garlic, walnuts, milk and spices to a high speed blender and blitz until smooth. Transfer the green mixture to a large skillet on low-medium heat and cook for 3 - 5 minutes.
  4. Add the drained spaghetti and lemon juice and stir through until well coated.
  5. Divide between serving bowls and enjoy!
