  1. Prepare the vegan egg
To prepare the vegan egg, blend all egg ingredients until smooth and creamy: tofu, nutritional yeast, turmeric, paprika, mustard, garlic powder, onion powder, salt and milk. Set aside.
  2. Warm a large skillet over medium-high heat. Once hot, add the chopped onion and bell pepper. Sauté in a tbsp of water for 5 minutes, until the onions are tender and turning translucent.
  3. Add the garlic and spices and stir for 2 minutes, until nice and fragrant.
  4. Pour in the diced tomatoes, stir and bring to a simmer. Reduce the heat to maintain a gentle simmer and cook for 5 minutes to give the flavors time to meld.
  5. Use the back of a spoon to make some wells and scoop in the tofu egg mixture. Repeat until all egg mixture is used up.
  6. Bring to a low simmer, cover and cook for 5 minutes. Then, remove the lid and cook for 3 more minutes, allowing the excess liquid to evaporate.
  7. Top with fresh parsley and nutritional yeast. Serve with any kind of crusty bread. Enjoy!
  8. How to store
Store the leftovers in the refrigerator for up to 2 days.
