Flavorful and delicious 30 minutes vegan Shakshuka, a middle-eastern inspired brunch consisting of soft and creamy tofu eggs in a tangy red pepper and tomato sauce. Perfect scoped with crusty bread.

Ingredients (4 servings)
Shakshuka
- 1 medium Red onion (finely chopped)
- 1 medium Red bell pepper (finely diced)
- 1 tbsp Water
- 5 clove Garlic, raw (minced)
- 800 g Diced tomatoes, canned
Spices
- 1 tsp, ground Cumin
- 1/2 tsp, flakes Hot chili pepper, sun-dried
- 1/4 tsp Salt
- 1/4 tsp, ground Black pepper
To serve
- 4 slice Sourdough Bread (any bread)
- 2 tbsp Parsley leaves, fresh (finely chopped)
- 2 tbsp Nutritional yeast
Vegan Tofu Egg
- 1 block Tofu
- 2 tbsp Nutritional yeast
- 1/2 tsp Turmeric, ground
- 1/2 tsp Paprika
- 1 tsp Yellow mustard (dijon)
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/4 tsp Salt
- 1/3 cup Oat milk (any plant-based milk)

Prepare the vegan egg
To prepare the vegan egg, blend all egg ingredients until smooth and creamy: tofu, nutritional yeast, turmeric, paprika, mustard, garlic powder, onion powder, salt and milk. Set aside. - Warm a large skillet over medium-high heat. Once hot, add the chopped onion and bell pepper. Sauté in a tbsp of water for 5 minutes, until the onions are tender and turning translucent.
- Add the garlic and spices and stir for 2 minutes, until nice and fragrant.
- Pour in the diced tomatoes, stir and bring to a simmer. Reduce the heat to maintain a gentle simmer and cook for 5 minutes to give the flavors time to meld.
- Use the back of a spoon to make some wells and scoop in the tofu egg mixture. Repeat until all egg mixture is used up.
- Bring to a low simmer, cover and cook for 5 minutes. Then, remove the lid and cook for 3 more minutes, allowing the excess liquid to evaporate.
- Top with fresh parsley and nutritional yeast. Serve with any kind of crusty bread. Enjoy!
