Roast the cashews
Preheat the oven to 165 C (330 F) and line a baking sheet with parchment paper. Spread the nuts out on the baking sheet and roast them in the oven for 15 minutes, tossing halfway. Leave the nuts to cool down slightly. -
Blend the cashews
Transfer the cashews to a high speed blender. Blend the cashews into a smooth and creamy cashew butter, scraping down any nuts stuck to the sides using a spatula. This will take approximately 10 minutes and is best done in intervals, giving your blender a break between blending sessions so it won’t overheat. The longer you blend, the smoother the butter will become. -

Store in an airtight container for up to two months.
