Red Lentils Chili

Ingredients (6 servings)

Other

  • 1 tbsp Grapeseed oil (any cooking oil)
  • 1 medium Red onion (diced)
  • 1 large Red bell pepper (diced)
  • 2 tsp Salt
  • 4 clove Garlic, raw (minced)
  • 1 pepper Jalapeno, raw (thinly sliced, keep the seeds for spiciness)
  • 4 cup Diced tomatoes, canned
  • 1 2/3 cup Water
  • 3/4 cup Red lentils, raw
  • 1 1/2 cup Red kidney beans, boiled, with salt (drained)
  • 1 1/2 cup Black beans, boiled, with salt (drained)
  • 1 cup Corn, sweet, yellow, canned, no salt added (drained)

Spices

  • 2 tbsp, ground Cumin
  • 1 tsp Paprika
  • 1/2 tbsp cocoa powder
  • 1/2 tbsp, leaves Oregano, dried
  • 1/2 tsp Cinnamon, ground

Instructions

  1. In a deep pot (like a dutch oven) heat the cooking oil over medium-high heat.
  2. Once hot, add the diced onion, bell pepper and salt. Sauté for 3 to 5 minutes.
  3. Next, add ingredients to the pot in the following order: the minced garlic, jalapeno, spices, diced tomatoes and water. Stir to combine and bring to a boil over medium-high heat, then, decrease to maintain a gentle simmer.
  4. Add the lentils to the pot and cook for 15 minutes, until lentils are mostly tender. As the chili is cooking, you may need to add more water if the mixture is looking to dry and the lentils aren’t submerged.
  5. Next, add the beans and corn to the pot and simmer for 20 more minutes, for the flavors to meld together.
  6. Adjust seasonings as needed, adding more salt for saltiness, cumin or paprika for smokiness. For extra spiciness, you can garnish with fresh jalapeno. Enjoy!
  7. How to store
    Store leftovers in the refrigerator for up to 4 days. Reheat on the stovetop or microwave.
