Poppy Seeds Pancakes

Breakfast worth getting out of bed for, fluffy poppy seeds pancakes, no sugar, no fuss.

Ingredients (2 servings)

Dry

  • 1 2/3 cup White wheat flour, all-purpose
  • 1/3 cup Coconut flour
  • 1 tbsp Baking powder
  • 2 tbsp Poppy seeds

Liquid

  • 1 1/4 cup Oat milk (any plant based milk)
  • 2 tbsp Maple syrup
  • 2 tbsp Apple cider vinegar

To serve

  • 4 tbsp Maple syrup

Instructions

  1. In a medium bowl, add the dry ingredients and stir to combine.
  2. Pour the liquid ingredients into the dry mixture and gently whisk, by hand, until combined.
  3. Let the batter rest for 5 - 10 minutes.
  4. To cook the pancakes, pour about 1/4 cup of batter onto a nonstick pan over medium heat. The batter is quite thick and it might not speared on its own. In that case, use the back of a spoon or the cup used to pour the batter and flatten the pancake to form a round shape, using circular motions.
  5. When the top begins to bubble, flip the pancake and cook until golden, around 2 minutes on each side.
  6. Serve warm with maple syrup or desired toppings. Enjoy!
