Nutty Wild Rice and Apricots Salad

Ingredients (2 servings)

  • 15 g Coconut flakes
  • 15 g Walnuts
  • 15 g Hazelnuts
  • 1 small Red onion (chopped)
  • 1/2 medium Green bell pepper (chopped)
  • 100 g Apricots, dried (chopped)
  • 1 fruit Lime juice
  • 1 tbsp Walnut oil (or your favorite nut oil)
  • 1/8 tsp Salt (to taste)
  • 1 cup Wild rice, raw

  1. Cook the rice
    Cook the rice according to the package instructions. Once cooked, rinse under cold water to cool down.
  2. Toast the nuts
    While the rice is cooking, heat a small skillet and toast the coconut flakes, walnuts and hazelnuts until lightly toasted. Keep a close eye on them so they don’t burn.
  3. Once the rice and nuts are cool, toss everything together. Taste and adjust as needed, adding more salt to taste. Enjoy!
