Ingredients (2 servings)
- 15 g Coconut flakes
- 15 g Walnuts
- 15 g Hazelnuts
- 1 small Red onion (chopped)
- 1/2 medium Green bell pepper (chopped)
- 100 g Apricots, dried (chopped)
- 1 fruit Lime juice
- 1 tbsp Walnut oil (or your favorite nut oil)
- 1/8 tsp Salt (to taste)
- 1 cup Wild rice, raw

Instructions

Cook the rice
Cook the rice according to the package instructions. Once cooked, rinse under cold water to cool down. -
Toast the nuts
While the rice is cooking, heat a small skillet and toast the coconut flakes, walnuts and hazelnuts until lightly toasted. Keep a close eye on them so they don’t burn. - Once the rice and nuts are cool, toss everything together. Taste and adjust as needed, adding more salt to taste. Enjoy!
