Moroccan Chickpea “Omelette”

Ingredients (2 servings)


  • 1 cup Chickpea flour (besan)
  • 1 tsp Ras El Hanout
  • 1/2 tsp, ground Cumin
  • 1/4 tsp Cayenne
  • 1/4 tsp Paprika
  • 1/4 tsp Turmeric, ground
  • 1/2 tsp, leaves Thyme, dried
  • 1/4 tsp Salt
  • 1/4 tsp, ground Black pepper
  • 2 tbsp Nutritional yeast
  • 1 tsp Baking powder
  • 1 cup Water


  • 1 medium Red bell pepper (thinly sliced)
  • 1 small Red onion (thinly sliced)
  • 8 cherry Tomatoes, raw (halved)
  • 10 olive Olives, black (pitted)
  • 1 handful baby leaves Spinach, raw

  1. Prepare the batter
    First, add all dry ingredients in a mixing bowl and stir to combine: chickpea flour, ras el hanout, cumin, cayenne, paprika, turmeric, thyme, salt, black pepper nutritional yeast and baking powder. Next, whisk in enough water until you get a pancake batter consistency.\

  2. Let the batter rest for 15 minutes while you take care of the filling.
  3. Prepare the vegetables
    Preheat a large, non-stick oven-proof frying pan (or Dutch Oven) and add a drop of cooking oil. Preheat your grill (broiler).
  4. Add the sliced peppers and onions to the pan and sauté over medium heat for 4 - 5 minutes or until soft, stirring often. Once the peppers and onions are soft, remove them from the pan and mix together with the halved tomatoes, olives (chopped into 3) and spinach. Set the vegetable mix aside.
  5. Now, lower the heat, and add a touch more oil, if needed. Ladle in the batter, and quickly follow with a good covering of the vegetable mix.
  6. Grill the Omelette
    Cook for 3 - 4 minutes at low heat before placing the pan under your grill just to cook the top. Grill for another 4 - 5 minutes or until golden.
  7. Slide the omelette onto a plate and top with a dressing of your choice (e.g. hummus, avocado). Enjoy!
