Milk Aioli Sauce

The most simple, foolproof Aioli recipe. This is the egg-free version that has only three ingredients (apart from the seasoning) and it’s basically a garlic mayonnaise or Alioli as the Spanish call it.

Tips:

  1. You can use plain, smoked or black garlic, depending on your taste.

  2. You can also add basil, tarragon or young thyme when you first begin blending the garlic with the milk.

Ingredients (14 servings)

  • 3 clove Garlic, raw (sliced)
  • 1/2 cup Oat milk (or any plant based milk)
  • 1 cup Sunflower oil, high oleic
  • 1/2 tsp Salt

Instructions

  1. First add the garlic and milk to a narrow vessel and blitz using a vertical stick blender for 15 seconds.
  2. Next add the salt and then slowly but steady drizzle in half of the oil while blitzing with the stick blender.
  3. Continue to blitz in the remaining oil. You should end up with a creamy mayonnaise-like sauce.
  4. How to store
    Store leftovers in an airtight container in the refrigerator for up to 4 days.
