Mexican Sandwich

Ingredients (4 servings)

Beans filling

  • 2 cup Black beans, boiled, with salt
  • 1 tbsp Tomato paste
  • 1 tbsp Red pepper paste
  • 1/4 tsp, ground Cumin
  • 1/8 tsp, ground Black pepper
  • 1/2 cup Brown rice, uncooked

Simple guacamole

  • 2 fruit Avocado, raw
  • 1/8 tsp Salt
  • 1/8 tsp, ground Black pepper

To Serve

  • 4 buns Burger Buns (any bread)
  • 1 medium Red onion (sliced)
  • 4 tbsp Sriracha hot chili sauce (to taste)

  1. Cook the rice
    Bring water to a boil and stir in the rice and a pinch of salt. Cook according to the packet instructions.
  2. Prepare the beans filling
    Heat a large skillet over medium-high heat. Once hot, add the drained beans, tomato paste, red pepper paste and spices. Bring to a simmer and let it cook for 3 to 5 minutes, stirring occasionally. Taste and adjust flavors!
    When using beans from a can, they may be boiled with salt already. Always taste before adding more salt.
  3. Once the rice has boiled, add it to the beans mixture and stir to combine.
  4. Prepare the guacamole
    Add the contents of the avocado, salt and pepper to a medium bowl. Using a fork, mash and stir until it reaches the desired consistency.
  5. Assemble the sandwiches
    Grill the buns and then spread them with a generous amount of guacamole, followed by the beans mixture, red onion slices and more guacamole on top. Enjoy with some extra hot sauce!
