Hummus Toast

Breakfast, dinner or party food? Yes, yes and yes!

Tips:

  1. The Crispy Chickpeas can be prepared in advance. If you are in a hurry, simply substitute with canned or homemade boiled chickpeas. I strongly suggest trying out the crispy, oil free chickpeas recipe, it’s so crunchy, healthy and addictive! You can thank me later.

  2. Use any hummus varieties you have at hand. This time, I’ve used Roasted Peppers Hummus and as you can tell, bloody Beet Hummus.

Ingredients (2 servings)

Hummus and Caramelised Carrots Toast

  • 4 tbsp Hummus (homemade or store bought)
  • 2 tsp Grapeseed oil (any vegetable oil)
  • 1 medium Carrots, raw (julienned)
  • 1 dash Salt
  • 2 tbsp Maple syrup
  • 10 g Walnuts
  • 2 slice Sourdough Bread (any bread)

Instructions

  1. Prepare the chickpeas
    Prepare the crispy chickpeas if you haven’t already. Navigate to the recipe by clicking on the ingredient. In a hurry? Substitute with boiled chickpeas, canned or homemade.
  2. Toast up your bread, 3 small slices of bread per serving (one bread slice weighting around 30-35g).
  3. Caramelise the carrots
    Heat the oil on medium-high heat. Once hot, add the julienned carrots and salt to taste. Let them cook in one layer, until golden brown, around 5 minutes, stirring occasionally. Add the maple syrup and sauté for another 3 minutes.
  4. Hummus and caramelised carrots toast
    Top each slice with two tbsp of hummus followed by the caramelised carrots and walnuts for crunchiness.
  5. Hummus and crispy chickpeas
    Top each slice with two tbsp of hummus followed by sauerkraut and crispy chickpeas.
  6. Hummus and pickles
    Top each slice with two tbsp of hummus followed by pickled cucumbers.
  7. Prepare the toasts just before serving, until then, store the ingredients in separate containers.
