Ingredients (2 servings)

  • 1 cup Brown rice, uncooked
  • 1 medium Red onion (finely chopped)
  • 1/2 medium Red bell pepper (cubed)
  • 1/2 medium Green bell pepper (cubed)
  • 2 clove Garlic, raw (minced)
  • 1 cup Black beans, boiled, with salt
  • 1/2 tsp, ground Cumin
  • 1/4 tsp Salt (to taste)
  • 1 tsp Sriracha hot chili sauce (to taste)

Instructions

  1. Prepare the rice
    Cook the rice according to the package instructions.
  2. Sauté the vegetables
    Warm a large skillet over medium heat. Once hot, add the chopped onion and peppers and sauté in a splash of water until the onion is translucent, around 2 - 3 minutes. Add the minced garlic and cook for another minute.
  3. Add the beans, rice and seasonings and toss to combine. If the dish feels to dry add a splash of water or black bean cooking liquid.
  4. How to store
    This recipe can last for up to 3 days in the refrigerator.
