Ingredients (2 servings)
- 1 cup Brown rice, uncooked
- 1 medium Red onion (finely chopped)
- 1/2 medium Red bell pepper (cubed)
- 1/2 medium Green bell pepper (cubed)
- 2 clove Garlic, raw (minced)
- 1 cup Black beans, boiled, with salt
- 1/2 tsp, ground Cumin
- 1/4 tsp Salt (to taste)
- 1 tsp Sriracha hot chili sauce (to taste)

Prepare the rice
Cook the rice according to the package instructions. -
Sauté the vegetables
Warm a large skillet over medium heat. Once hot, add the chopped onion and peppers and sauté in a splash of water until the onion is translucent, around 2 - 3 minutes. Add the minced garlic and cook for another minute. - Add the beans, rice and seasonings and toss to combine. If the dish feels to dry add a splash of water or black bean cooking liquid.
