Fluffy Banana Pancakes

Breakfast worth getting out of bed for, fluffy banana pancakes, no sugar, no fuss.

Ingredients (2 servings)


  • 1 1/2 cup White wheat flour, all-purpose
  • 2 1/2 tsp Baking powder


  • 2 medium Banana (extra-ripe)
  • 1 cup Water
  • 2 tbsp Maple syrup
  • 1 tbsp Coconut oil
  • 1 tbsp Apple cider vinegar

To Serve

  • 2 tbsp Maple syrup
  • 1 medium Banana

  1. In a medium bowl, add the dry ingredients and stir to combine.
  2. Add the liquid ingredients to the food processor and process until smooth.
  3. Pour the liquid mixture into the dry mixture and gently whisk to combine.
  4. Let the batter rest for 5 - 10 minutes.
  5. To cook the pancakes, pour about 1/2 cup of batter onto a nonstick pan over medium heat.
  6. When the top begins to bubble, flip the pancake and cook until golden.
  7. Serve warm with extra banana and maple syrup. Enjoy!
