Ingredients (4 servings)
Patties
- 1 cup Chickpeas, raw
- 1/2 medium Red onion (roughly chopped)
- 1 cup Parsley leaves, fresh (roughly chopped)
- 1 cup Coriander leaves, fresh (roughly chopped; can substitute with parsley)
- 3 clove Garlic, raw
- 1 tsp, ground Cumin
- 1/2 tsp, ground Cardamom
- 1 tsp Salt
- 1/4 tsp, ground Black pepper
- 2 tbsp Chickpea flour (besan)
- 1/2 tsp Baking soda
Sauce
- 1 clove Garlic, raw
- 1 1/2 tbsp Lemon juice, raw
- 1/8 tsp Salt (to taste)
- 4 tbsp Tahini
To serve
- 4 buns Burger Buns
- 4 small Pickled cucumber, sour (sliced lengthwise)
- 2 medium Red onion (sliced)
- 1/2 cup Mixed salad greens, raw (any salad of your choice)

Instructions

Soak the chickpeas
The night before, soak the chickpeas in plenty of water, they will triple in size. -
Prepare the patties
Drain and rinse the chickpeas and tip them into a high speed blender along with the onion, parsley leaves, coriander leaves, garlic, cumin, cardamom, salt and pepper. Process until the mixture resembles the texture of coarse sand. - Transfer the mixture to a mixing bowl. Add the chickpeas flour and baking soda and stir to combine. Cover and transfer to the refrigerator. Let it sit for 30 minutes.
- Preheat the oven to 220C (425F) and line a baking sheet with parchment paper.
- Divide the composition and form the mixture into patties using your hands, around the same size as the buns. Places the patties onto the baking sheet and bake in the oven for 25 minutes.

Prepare the sauce
In a small food processor, combine the lemon juice, garlic and salt. Process until the garlic is very finely chopped, then let the mixture rest so the garlic flavour can mellow, ideally 10 minutes or longer. Add the tahini and blend until the mixture is creamy, scraping down any tahini stuck to the sides and bottom of the processor as necessary. -
Assemble the burger
Once the patties are out of the oven, stack up your Falafel burger. First, spread a layer of sauce, then put the patty on top followed by cucumber, onion and greens of your choice.
