Double Portobello Burger

Ingredients (2 servings)

Asian-style Guacamole

  • 1 fruit Avocado, raw
  • 1 tsp Ginger root, raw (minced)
  • 1 tsp Rice vinegar
  • 1/8 tsp Salt
  • 1/8 tsp, ground Black pepper

Burger Buns

Carrot ribbon salad

  • 1 medium Carrots, raw
  • 2 tsp Rice vinegar
  • 1/4 tsp Maple syrup
  • 1 tsp Sesame seeds (toasted)
  • 1/8 tsp Salt

Cucumber ribbon salad

  • 1 regular Cucumber, raw
  • 2 tsp Rice vinegar
  • 1/4 tsp Maple syrup
  • 1 tsp Sesame seeds (toasted)
  • 1/8 tsp Salt

Mushroom patties

  • 4 piece Portobello mushrooms, raw
  • 2 tbsp Soy sauce
  • 1 tbsp Balsamic vinegar
  • 2 clove Garlic, raw

Instructions

  1. To clean the mushrooms, use a paper towel to wipe away any dirt and remove their steams.
  2. Marinate the mushrooms
    In a small bowl, combine the soy sauce, balsamic vinegar and minced garlic. Brush the marinade over the mushrooms on all sides. Set aside to marinate at room temperature, for at least 30 minutes.
  3. Prepare the cucumber salad
    Cut the cucumber into thin ribbons using a mandolin or veggie peeler. In a medium bowl combine the rice vinegar, maple syrup, toasted sesame seeds and salt. Then add the cucumber and toss to coat.
  4. Prepare the carrot salad
    Similar, cut the carrot into thin ribbons using a mandolin or veggie peeler. In a medium bowl combine the rice vinegar, maple syrup, toasted sesame seeds and salt. Then add the carrot and toss to coat.
  5. Prepare the Asian-style Guacamole
    Add the contents of the avocado, minced ginger, rice vinegar, salt and pepper to a medium bowl. Using a fork, mash and stir until it reaches the desired consistency.
  6. Cook the mushrooms
    Heat a grill or skillet over medium high heat. Cook the mushrooms, for about 3 - 6 minutes on each side. The mushrooms should end up deep golden brown.
  7. Assemble the burgers
    Grill the buns and then spread them with a generous amount of guacamole. Place the portobello mushrooms side up, two mushrooms in each burger. Layer up with cucumber and carrot salad. Enjoy!
