Christmas Pancakes

Ingredients (2 servings)

Dry

  • 2 cup White wheat flour, all-purpose
  • 1/2 tbsp Baking powder
  • 2 tsp Matcha green Tea Powder
  • 1 tsp Spirulina powder (green)

Liquid

  • 1 1/4 cup Water (or plant based milk)
  • 4 tbsp Maple syrup
  • 1 tbsp Apple cider vinegar (or lemon juice)

To serve

  • 2 tbsp Maple syrup

Instructions

  1. Mix the dry ingredients
    In a medium bowl, add the dry ingredients and stir to combine.
  2. Prepare the batter
    Pour the liquid ingredients into the dry mixture and gently whisk, by hand, until smooth.
  3. Let the batter rest for 5 - 10 minutes.
  4. Cook the pancakes
    To cook the pancakes, heat a nonstick pan over medium heat. Make different sized pancakes. The base pancake is made of 5 tbsp of batter. Decrease the quantity as you go up to the top of the tree. I’ve made one “Christmas tree” out of two servings.
  5. When the top begins to bubble, flip the pancake and cook until golden, around one minute on each side (the small ones may need only a few seconds to be done).
  6. Stack your pancakes in a form of a Christmas tree. Serve warm with maple syrup or desired toppings. Enjoy!
  7. How to store
    Place leftovers in a zip lock bag or sealable container and store in the refrigerator for up to 3 days.
