Ingredients (2 servings)
Chia pudding
- 4 tbsp Maple syrup
- 1 1/2 cup Oat milk (any plant based milk)
- 1/2 cup Chia seeds
Mango nice-cream
- 200 g Mango, frozen
- 3 tbsp Oat milk (any plant based milk)

Prepare the chia pudding
First, mix together the maple syrup a plant based milk. - Next add the chia seeds and stir everything together. Let the pudding sit for 10 - 15 minutes and give it another mix, to even out the mixture.
- Cover and refrigerate overnight or at least 3 hours.

Prepare the mango nice-cream
Right before serving, prepare the mango nice-cream. Place the frozen mango chunks in a high speed food processor. Pulse until the fruits start to break down and pieces become smaller, then, process on high speed. When necessary, stop the processor to scrape down the sides. Add milk by the tablespoon, adding only as much as necessary. Process until smooth. - Divide chia pudding between serving bowls and top with mango nice-cream. Enjoy!
