Baked Pancake with Plums

Oil free pancakes without the fuss of flipping them.

Ingredients (2 servings)

  • 2 fruit Plums, raw (sliced)

Pancake

  • 1 1/2 cup Rolled oats
  • 1 cup Soy milk (any plant based milk)
  • 2 1/2 tsp Baking powder
  • 1 large Banana (very ripped)

To Serve

  • 2 tbsp Maple syrup

Instructions

  1. Preheat the oven to 180C (360F).
  2. Process the oats in a food processor until it becomes coarse flour. Move the flour to a medium bowl, add the baking powder and stir to combine.
  3. Add the plant based milk and banana to the food processor and process until smooth.
  4. Pour the liquid mixture into the dry mixture and whisk to combine.
  5. Pour the pancake mixture into a large oven-proof saucepan (22 cm for the default number of servings) and arrange the plum slices on top as desired.
  6. Bake for 30 minutes.
  7. Serve with maple syrup!
