- 2 fruit Plums, raw (sliced)

- 1 1/2 cup Rolled oats
- 1 cup Soy milk (any plant based milk)
- 2 1/2 tsp Baking powder
- 1 large Banana (very ripped)
To Serve
- 2 tbsp Maple syrup

Instructions
- Preheat the oven to 180C (360F).
- Process the oats in a food processor until it becomes coarse flour. Move the flour to a medium bowl, add the baking powder and stir to combine.
- Add the plant based milk and banana to the food processor and process until smooth.
- Pour the liquid mixture into the dry mixture and whisk to combine.
- Pour the pancake mixture into a large oven-proof saucepan (22 cm for the default number of servings) and arrange the plum slices on top as desired.
- Bake for 30 minutes.
- Serve with maple syrup!
