Avocado Dressing

Got five minutes? Then I suggest you make your own dressing, healthy and lusciously avocado dressing! Make a larger batch and use it later in salads or Buddha Bowls.

Tip: for small batches, a small food processor or vertical blender works best.

Ingredients (2 servings)

  • 1 fruit Avocado, raw (ripe)
  • 1 fruit Lime juice
  • 1/4 cup Coriander leaves, fresh (or parsley)
  • 1/4 cup Parsley leaves, fresh
  • 1/4 tsp Salt (to taste)
  • 1 clove Garlic, raw
  • 2 tbsp Water

Instructions

  1. Add the avocado, lime juice, cilantro, parsley, garlic and salt to a food processor. Process until smooth, scraping down the sides as necessary.
  2. To thin the dressing, add water, by the tablespoon, until it reaches the desired consistency.
  3. Store leftovers in an airtight container in the refrigerator for up to 3 - 4 days.
