Apple Cinnamon Oatmeal

The Apple Cinnamon Oatmeal is an autumn inspired twist on plain oatmeal, ready in less than 15 minutes.

Notes:

  1. If you are gluten-free, make sure you buy certified gluten-free oats. Oats are naturally gluten-free, but many are processed in facilities that also handle wheat products.

  2. Add a dash of salt to bring out the nutty glamour of the oats.

  3. Load it up! Oatmeal is a great canvas for all sort of toppings.

Ingredients (2 servings)

Other

  • 1 tsp Coconut oil
  • 2 medium Apples, raw, golden (any variety, cubed)
  • 1/2 tsp Cinnamon, ground
  • 1/8 tsp Nutmeg, ground
  • 1/4 cup shelled Walnuts
  • 1 cup Rolled oats
  • 2 cup Soy milk (any plant based milk)
  • 1 tsp Chia seeds
  • 1 tbsp Maple syrup
  • 1 dash Salt

To serve

  • 1/4 cup shelled Walnuts
  • 2 tbsp Maple syrup

Instructions

  1. Heat the coconut oil in a medium sized saucepan over medium heat.
  2. Add the apples cubes and sauté for 2 - 3 minutes. Then stir in the cinnamon and nutmeg.
  3. Next add the walnuts, plant based milk, maple syrup, oats, chia seeds and a dash of salt. Stir to combine and let it cook for 5 minutes, until the oats are soft and have absorbed most of the liquid. Stir frequently.
  4. Remove from heat and let it stand for two minutes. Serve hot with desired toppings.
  5. How to store
    If you have any leftovers, you can keep them in an airtight container and reheat on the stovetop. Just be sure to drizzle it with some milk/water to help it cook faster and not stick to the pan.
